My Review

I was super excited to see Skinny-licious come up for a tour with Cedar Fort! I've been participating in a fitness challenge (off last week and starting again this week) and I thought this was perfect timing for me to use a cookbook like this. The cover is gorgeous and the idea of making and eating yummy without inhaling a ton of calories sounds fabulous too!

So what did I think? I really have been enjoying this cookbook! The recipes are simple, which is half the battle in eating healthy, I think. I need recipes that I can easily make during the week with all the craziness of homework and getting kids or my husband and I where we need to be. Sometimes we turn to fast food or easy and not-so-good for us meals because we need something super fast. Another thing I really liked was the portion control ideas. One such idea is with the recipe for Mud Pies where she suggests using ice cream cartons so that you only eat the amount you should.

Then there is the 8-Hour Eating Schedule. I have actually done this sometimes without realizing that it is an actual weight-loss plan or that I was doing anything that scientifically aides weight loss. I'm planning on starting that this week as I begin another fitness challenge and seeing how well that helps me lose weight. I'll be updating this review in a few weeks to say if it is working for me or not.

Some favorite recipes from the book were the Bruschetta, Greek Salad (yummy Creamy Greek Dressing), Shrimp Red Curry (love curry and shrimp, so it's a big hit and using brown rice ups the nutrients), the Bruschetta Chicken (a knock-off of the Cheescake Factory's Tuscan chicken), and the Herb-Crusted Salmon.

I'm looking forward to continuing to try recipes from Skinny-licious and lose weight over the next few months. I'm also planning on trying out Shauna's other cookbook, Sweet and Savory.
